Our process

Acquilano Wine Cellars is a small farm winery in the Finger Lakes region of upstate New York. Our focus is on using sustainable and renewable strategies in the vineyard, such as leaving ground cover and designing the rows to increase airflow and decreasing the use of sprays. We pick by hand and use machinery to the minimal extent possible to decrease our impact on the environment.

In the winery, we focus on small batches and use cellaring to provide for temperature control minimizing the use of electricity or other power sources to manage the temperature of the wine in storage.

We blend techniques that our ancestors used to make wine, with modern science to make sure that our wines are the best that they can be. Our focus is on trying to find the balance between art and science.
